Heat 2 tablespoons of avocado oil over medium heat
Add finely diced onions to pan and cook for 1-2 mins
Add ground meat to pan and cook until no longer pink
Drain most of the fat off of the meat and return to pan. (I normally leave just a little of the fat in the pan. Drain don’t strain)
Add 3 tablespoons of my Chili Seasoning (recipe in blog) and stir into meat until it is evenly distributed
Add Petite Diced tomatoes with Juices and stir
Add Kidney Beans and 1 cup of Beef Broth to mixture, cover, and bring to a simmer
Combine 1/2 cup of Beef Broth and 3 teaspoons of Tapioca Flour together in a separate Bowl
Pour the Broth and Tapioca Mixture into the Chili and stir until they are mixed well
Let mixture simmer for 10-15 mins, stirring occasionally
