Crockpot Balsamic Chicken

Equipment

  • crock pot

Ingredients

  • 6 boneless skinless chicken breast
  • 1/2 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 1 tbsp swerve sweetener or sweetener of your choice
  • 1 tbsp onion powder
  • 1 tbsp granulated garlic
  • 1 tbsp parsley
  • 1 tsp basil
  • 1/2 tsp thyme
  • 1 tsp salt
  • 1 can petite diced tomatoes
  • 1 onion, sliced
  • 2 tbsp butter Small slices from a stick of butter or what ever you have on hand.

Instructions

  • Line your crockpot and place 6 chicken breast in the bottom
  • In a separate bowl, whisk the balsamic, chicken broth, and swerve together
  • Whisk in the onion powder, granulated garlic, parsley, thyme, basil, and salt
  • Pour the mixture over the chicken
  • Pour one can of petite diced tomatoes with its juices over the chicken
  • Lay the onion slices on top of chicken
  • Lay the butter slices on top of onions
  • Cook on low for 6 hours or on high for 4 hours

Notes

I like to use crockpot liners so that cleaning up after dinner is a little easier. If you do not have crockpot liners, just put an extra 1/4 cup of chicken broth in the bottom of your crockpot so the chicken will not stick to it.
