Y’all, this chicken recipe is about to be your new favorite. It’s savory, full of flavor, and most importantly super easy.
I came up with this recipe by literally going through my freezer, pantry, and spice cabinet, trying to figure out something to throw together for dinner. I am not a big planner so majority of the time, dinner is a recipe I’ve thrown together.
Whether you are following a keto diet, gluten free, low carb diet, or just trying to eat a little healthier, this recipe is for you.
You will need 6 boneless, skinless, chicken breast. Lay your chicken breast in your lined crockpot. If you do not have liners, then add an extra 1/4 cup of chicken broth to the bottom of your crockpot before you put the chicken in to prevent it from sticking.
Next, in a separate bowl, you need to whisk 1/2 cup of chicken broth, 1/4 cup of balsamic vinegar, and 1 tablespoon of swerve (or sweetener of your choice).
Then you can whisk in all of your seasonings into the balsamic mixture. Whisk 1 tablespoon of onion powder, 1 tablespoon of granulated garlic, 1 tablespoon of parsley, 1/2 teaspoon of thyme, 1 teaspoon of basil, and 1 teaspoon of salt together. Then pour the mixture over the chicken.
Pour 1 can of petite Diced Tomatoes and it juice over the chicken.
Now, it’s time for the final steps. Just slice one onion and place the slices on top of the chicken and slice two tablespoons of butter from a stick of butter and lay them on top of the onions.
Time to turn on the crockpot and get this yumminess started cooking. You can either cook it on low for 6 hours or on high for 4 hours.

Crockpot Balsamic Chicken

Ingredients
- 6 boneless skinless chicken breast
- 1/2 cup chicken broth
- 1/4 cup balsamic vinegar
- 1 tbsp swerve sweetener or sweetener of your choice
- 1 tbsp onion powder
- 1 tbsp granulated garlic
- 1 tbsp parsley
- 1 tsp basil
- 1/2 tsp thyme
- 1 tsp salt
- 1 can petite diced tomatoes
- 1 onion, sliced
- 2 tbsp butter Small slices from a stick of butter or what ever you have on hand.
Instructions
- Line your crockpot and place 6 chicken breast in the bottom
- In a separate bowl, whisk the balsamic, chicken broth, and swerve together
- Whisk in the onion powder, granulated garlic, parsley, thyme, basil, and salt
- Pour the mixture over the chicken
- Pour one can of petite diced tomatoes with its juices over the chicken
- Lay the onion slices on top of chicken
- Lay the butter slices on top of onions
- Cook on low for 6 hours or on high for 4 hours
